  1. Blanch the pak choy in hot water for a minute, then place in cold water. Drain the water and chop the pak choy finely and squeeze out most of the liquid reserving a little to add the mince.
  2. Add the chopped pak choy and the reserved liquid of the pak choy to a bowl then add the mince, ginger, garlic oil, spices, spring onion, soy sauce and sesame oil. Mix to combine.
  3. Beat 1 egg in a small bowl. Using a pastry brush, brush the edges of the wonton wrappers and add a tablespoon of the mince mixture in the center and fold as desired.
  4. Prepare your steamer with parchment and bring water to a boil in a pot, place the steamer over the top of the pot with the water not touching the bottom of the steamer. Steam or fry for 15-20 minutes. Serve with soy sauce or sweet chili sauce on the side.
